Saffron pilaf

Ingredients

  • 2 cups of basmati or akhtama rice
  • 1 teaspoon of saffron
  • 2 tablespoons of hot water (for the saffron)
  • 50 grams of butter
  • 1 tablespoon of oil
  • 1 teaspoon of salt
  • Water (for cooking the rice)
  • Optional: dried fruit (raisins, dried apricots), walnuts, almonds or chestnuts

Method

  1. 01
    Steep the saffron:
    Put the saffron in a small bowl, add 2 tablespoons of hot water and leave it until it gives up its colour (at least 30 minutes).

    Prepare the rice:
    Rinse the rice several times and soak it in warm water for 30 minutes.

    Cook the rice:
    Put water and salt in a pan and, once it boils, add the rice. Drain it when the rice is half cooked.

    Grease the pan and set it to steam:
    Pour a little oil or butter into the bottom of the pan. If you like, you can line it with lavash or potato. Put the rice into the pan in layers, sprinkling saffron water over each layer.

    Steaming:
    Put a napkin or a tea towel under the lid. Steam the pilaf over a low heat for 30-40 minutes.
